Something else to try... remove the plastic door from the front of your airbox, the metal side panel will still attach as before. Having rest your mixture screw could have fattened the fuel curve too much, and doing this should help smooth out that part of the equation. Mine has not stalled under any throttle setting since I did this in 1999, with the bike at one year old.
As for the flooding problem, you'll probably need to overhaul the petcock. Suzuki VS anything Intruders are bad about having leaky petcocks due to poor QC, the inspector for your petcock may have been borrowed from that parts assembly line. Just a thought.
